Blueberry Chia Pudding

Ingredients:
— 1/2 cup chia seeds
— 2 cups unsweetened almond milk
— 1/4 cup maple syrup
— 1 teaspoon vanilla extract
— 1 cup fresh blueberries
— Optional toppings: more fresh blueberries, sliced almonds, drizzle of honey

Instructions:
1. In a large bowl, whisk together the chia seeds, almond milk, maple syrup, and vanilla extract until combined.
2. Add in the blueberries and gently mash with a fork to release some of their juices. Stir to combine.
3. Cover and refrigerate for at least 2 hours or overnight, until thick and pudding-like.
4. Serve the pudding with additional fresh blueberries and sliced almonds, if desired. Drizzle with honey, if desired.

Note: If the pudding is too thick, add additional almond milk. If it’s too thin, add more chia seeds.
